The lively combination of our 5-malt grain bill and the Pedro Ximénez hogshead results in a decidedly savory whiskey and one that stands out as quite unique in our catalog of Single Cask Series releases.
The nose starts with the Urfa Biber pepper and smoked paprika notes influenced by the Pedro Ximénez sherry. Water additions draw out more dried pepper, mole poblano, steak in butter-peppercorn sauce and heavy tobacco. While the palate doesn’t delivery the same intensity you would expect from the nose it is still decidedly savory. The dried peppers are apparent but balanced with dark chocolate-covered espresso beans, maple syrup over pancakes and more tobacco.
